I had a few people ask me for the coconut cupcake recipe ( mainly the frosting part )
The full recipe is in Ina Garten's "Barefoot Contessa" cookbook.
Frosting: "Cream Cheese Icing"
Makes 18-20 LG cupcakes or 48 regular size.
1 LB cream cheese @ room temp 3/4 LB UNSALTED butter at room temp 1 tsp pure vanilla extract 1/2 tsp pure almond extract 1 1/2 LBS confectioner sugar 'sifted' so you don't get chunks in your frosting....
In the bowl mix cream cheese, butter and vanilla and almond extracts. Add the powder sugar and mix until smooth.
Today is not a rest day for me. I will be doing yesterday's WOD in my basement.
